10 Breakfast Ideas

Breakfasts for Mornings That Need to Move

Some mornings give you time to make breakfast properly. Others give you just enough time to realize you are hungry before the day starts asking things from you.

This list has a little of both. The first breakfast is one I actually made myself, with the full recipe here on Your Slice of Life. The other nine are ideas from food creators whose full recipes I’ve linked so you can head directly to the original source when something catches your eye.

1. Canned Corned Beef and Rice

This one earned the first spot because it is mine—and because it came from exactly the kind of morning this list is meant for. I had just woken up, wanted something warm and filling, and had absolutely no desire to spend half the morning attached to the stove. The corned beef gets cooked with onion, tomato and pepper, with a little water to mellow the saltiness and ketchup for a touch of sweetness. Best of all, the whole breakfast takes about 30 minutes.

2. Avocado Toast With Egg

Avocado toast becomes a much more convincing breakfast once an egg gets involved. Feel Good Foodie’s version gives you the choice of fried, scrambled, boiled or poached eggs, so you are not locked into making it the same way every time. It is also one of those breakfasts that looks like you put in considerably more effort than the roughly ten minutes it actually takes. For mornings when I want something quick but still want an actual plate of food, this makes sense.

3. Overnight Oats

This is breakfast for people who would prefer their past self to handle the morning shift. Feel Good Foodie starts with a simple oats-and-milk base, then leaves plenty of room for fruit, yogurt, chia seeds, honey or whatever else you actually like eating. The big advantage is obvious: put it together the night before and breakfast is already waiting when you wake up. I especially like this idea for mornings when even turning on the stove feels overly ambitious.

4. Sausage and Egg Breakfast Quesadillas

A tortilla filled with sausage, egg and melted cheese is already making a fairly strong argument for itself. Budget Bytes takes the idea one step further by making these quesadillas freezer-friendly, which means you can prepare several and reheat them when breakfast needs to happen quickly. They take about 25 minutes when made fresh and feel much more substantial than grabbing something small on the way out. This is the sort of breakfast I would keep around specifically for mornings when hunger arrives before motivation does.

Breakfasts Worth Sitting Down For

Not every breakfast has to be about getting out the door as quickly as possible. Sometimes the morning gives you enough room to actually sit down, eat properly and perhaps remember that breakfast can be enjoyable instead of purely functional.

5. French Toast

French toast has always had that slightly suspicious ability to feel special while being remarkably simple to make. Love and Lemons uses thick bread dipped in an egg-and-milk mixture with cinnamon and vanilla, then cooks each side until golden. The recipe takes about 20 minutes, so this does not need to be reserved for a major weekend production either. Add fruit or maple syrup and suddenly an ordinary morning starts looking considerably better.

6. Banana Pancakes

If a couple of bananas have reached the stage where nobody wants to eat them by themselves anymore, pancakes seem like a respectable second career. Love and Lemons turns ripe bananas into fluffy pancakes with warm spiced banana flavour. They are simple enough for a regular morning but still feel more like a proper sit-down breakfast than something grabbed on the move. I would definitely keep this one for a slower morning with maple syrup nearby.

7. Toasted Oatmeal

Oatmeal is practical, but practical does not have to mean staring sadly into a bowl of beige mush. Cookie and Kate’s method starts by toasting rolled oats before adding the liquid, which brings out more of their nutty flavour and helps create a fluffier texture. It is still a straightforward breakfast, but that one extra step makes it feel a little less like something you are eating purely because someone once told you oats were good for you. Add fruit, nuts or whatever toppings make the bowl more interesting.

Breakfasts You Can Prep, Pack or Switch Up

The best breakfast ideas are often the ones that can adapt to the kind of morning you are having. These last three can be prepared ahead, carried with you or changed enough that eating them again does not immediately feel like repetition.

8. Breakfast Egg Muffins

Egg muffins make a lot of sense if you want breakfast prepared before the week starts getting ideas of its own. Sally’s Baking Addiction makes them like small handheld frittatas, and they can be prepared in a batch and reheated as needed. They are also easy to vary with different vegetables, cheeses or other fillings instead of making the exact same version every time. Breakfast already sitting in the refrigerator is rarely a bad situation to wake up to.

9. Breakfast Burritos

Breakfast burritos are basically an argument for putting an entire breakfast inside something you can hold with one hand. Feel Good Foodie fills theirs with scrambled eggs, black beans, cheese, salsa, peppers and onions, then gives instructions for making them ahead and freezing them. That makes them especially useful when you want something filling without starting from scratch every morning. A quick reheating job sounds much better than negotiating with several pots and pans before breakfast.

10. Smoothie Bowl

Sometimes breakfast needs to be cold, fruity and nowhere near a frying pan. Feel Good Foodie has three smoothie-bowl variations built around frozen fruit, including strawberry-blueberry, mango-banana and a green version with spinach. They take about five minutes and can be finished with fruit, seeds, nuts or granola depending on how much crunch you want. It is also a useful change of pace after several mornings of eggs, toast and other heavier breakfasts.
