Canned Corned Beef and Rice: A Quick 30-Minute Breakfast Recipe

The Story Behind This Quick Breakfast (Total Recipe Time: About 30 Minutes)

I had just woken up hungry, but this was definitely not one of those mornings when I felt like spending forever over the stove. I wanted something filling, satisfying and, most importantly, something I could have on my plate within about 30 minutes.

Canned corned beef made that decision pretty easy. I cooked it down with onion, tomato and pepper, then added a little water to mellow the saltiness and a touch of ketchup for sweetness. With some fluffy white rice on the side, breakfast was sorted without turning my morning into a kitchen shift.

Recipe: Ingredients (Prep Time: 10 minutes)

  • Corned beef: 1 can canned corned beef.
  • Vegetables: ½ small onion, 1 small tomato and a small piece of pepper, chopped.
  • Seasoning: ¼ tsp black pepper.
  • Sauce: 2 tbsp water and 1 tbsp ketchup.
  • Oil: 1 tsp cooking oil.
  • Rice: ¾ cup long-grain white rice, washed, with about 1½ cups water and a pinch of salt.

Recipe: Finally! Let’s Cook (Cook Time: 20 Minutes)

  • Rice: Add the washed rice, 1½ cups water and a pinch of salt to a pot. Bring to a boil, cover and simmer on low for about 18–20 minutes, or until tender and the water has been absorbed.
  • Vegetables: Heat 1 tsp oil in a frying pan over medium heat for about 1 minute; add the onion, tomato and pepper and cook for 1–2 minutes, stirring occasionally.
  • Corned beef: Add the canned corned beef and black pepper, breaking the beef apart as it cooks. Add 2 tbsp water to mellow the saltiness, then stir in 1 tbsp ketchup for a little sweetness. Cook for about 6–8 minutes, stirring occasionally, until hot and well combined with the vegetables.
  • Finale: Fluff the cooked rice with a fork and serve it alongside the hot corned beef. Breakfast done, and no unnecessary relationship with the stove required.

The result was exactly what I wanted that morning: warm rice, savoury corned beef, little pieces of vegetables throughout and just enough ketchup to give it a slight sweetness. The splash of water softened some of the saltiness too, making this simple breakfast taste a little more balanced without adding extra work.
